SAPIENS PALEO KITCHEN is a restaurant concept conceived and developed by Chef Aurore de Beauduy and restaurateur Roman Yasinsky. SAPIENS PALEO KITCHEN combines the elegance and sophistication of French cuisine with the PALEO DIET nutrition principles. The idea of this unique fusion stems from Chef Aurore and Roman’s dream to create a distinct dining experience that would offer customers an opportunity to enjoy delicious food while realizing the nutritional benefits leading to optimal health and well-being.

Over the years, working in the food service business and operating Vogue Bistro, a successful French restaurant Vogue Bistro in Surprise, AZ,  both Chef Aurore and Roman have personally witnessed a growing trend of customers frequently requesting foods that are nutrient-dense, toxin-free, encourage healthy gut, assist in weight management and promote good health. Their interest in the development of this concept culminated when both had to deal with personal health issues- Aurore with thyroid deficiencies and Roman with chronic gastritis and acid reflux disease. On a quest to understand the origins of these disorders, so common among the US adult population, they spent several years researching and came to the realization that their problems were caused by incorrect and sub-optimal nutrition rather than, suggested by doctors, genetic predisposition.

After having analyzed many nutrition methods and diets, they concluded that only the Paleo Diet fully addresses nutritional needs of the human body and creates a lasting impact on its well being. Paleo Diet promotes nutrition that is best suited for our digestive system from the evolutionary biology perspective. However, our primal blueprint is only a logical pretext to connect our past with our present. What makes the Paleo Diet so particularly convincing is comprehensive scientific data demonstrating what certain foods do to our bodies, which foods are optimal to promote good health, and which should be avoided.

By strictly following the Paleo nutrition guidelines, both Aurore and Roman were able to successfully restore their health issues without using conventional medicine recommended by doctors. In the process, they noticed that not only have they become healthier, but also happier and more energetic. Coincidentally, in 2017, Roman traveled to the Amazon region of Northern Brazil where he spent a week with a remote indigenous tribe. Among the many exciting things he learned about the tribe was their remarkable state of health. There were no signs of obesity, and none of the members of the tribe had diabetes, metabolic disorders, chronic diseases or heart problems. The answer became obvious the very first time he shared a meal prepared by the tribal women, which consisted of freshly caught fish, vegetables, starchy tubers, and fruits. That same primal meal could have been enjoyed by their ancestors for thousands of years beforehand. The tribe had no domesticated animals and wasn’t involved in any agricultural activities. Instead, the tribesmen hunted wild animals and caught fish, while women procured vegetables and fruits from the rainforest.  All of these vivid experiences were convincing enough to trigger Chef Aurore and Roman’s lifelong commitment to the Paleo nutrition principals, and a strong desire to share them with the rest of the world.
